I've been asked this question before, on other sites/blogs and thought it was interesting. I'd love to hear your thoughts on this.

Guacamole (Basic) Feel free to modify to your OWN taste, please!
2 Hass avacados (Got to be Hass. If you can't get them, don't bother)
Juice of 1/2 a fresh lime (No seeds please)
1 Serrano Chile (Seeded, membrane removed and chopped fine. A Jalepeno will work also)
1/2 a medium sized red onion (Fresh and sweet please)
1 Tablespoon Cilantro (Fresh and chopped. Don't have fresh, don't bother)
To taste:
Salt (Kosher please)
Pepper (Fresh ground)
Cut open avocados, scoop out the pulp and put in to a bowl. Dice the red onion, to a medium fine dice. De-seed the chile and chop fine.
Put all into a mixing bowl and mash them together. I like mine kind of chunky but really, it depends on how ripe your avocado is.
Add Cilantro, Salt and pepper to taste. I like lot's of fresh cilantro, you might not
Scoop into a bowl and cover with plastic wrap. Make sure the plastic wrap is pushed down to contact the surface of the Guacamole or else it will discolor.
Slip it into the frig for an hour or so..
That's it.
Like I said, this is basic. You can get REAL fancy with it. Sometimes I add sun dried tomatos and garlic. Really though, the main thing to remember here is to use the freshest ingredients you can find. Balance is everything. Too much of any of the above and you'll end up with green goop
